Buttery Chateau Potatoes

Ingredients

700gm New Potatoes
3 Cloves Garlic (peeled but left whole)
2 tbspn Butter
1 tbspn Olive Oil
Salt
Black Pepper


Preparation Method

Preheat the oven to 190C

Peel the new potatoes and pat them dry on kitchen towel

Add the potatoes to an oven-proof frying -pan, together with the whole Garlic Cloves, Butter and Olive Oil

Allow the butter to melt over a medium heat, tossing the potatoes regularly to ensure a good coating.

Season generously with Salt and Black Pepper.

When the potatoes begin to turn golden, place the pan into the oven and roast for 30-35 mins, until the potatoes are soft in the middle, with crispy brown exteriors.

Discard the roasted garlic, and serve the Chateau Potatoes drizzled with the excess garlic butter (scatter with Parsley if desired)
