Chilli Mushrooms in Red Wine

Ingredients

4 tbsp Olive Oil
2 cloves of Garlic
1 red Chilli
Salt and ground Pepper
1 large Onion- finely sliced
400gm Button Mushrooms, washed and wiped (but left whole)
150ml Red Wine


Preparation Method

Heat the oil in a large saucepan over a medium heat, add the garlic, chilli, salt and pepper and fry for about 1minute to infuse the oil.

Increase the heat, add the onion and fry for a further 3 minutes, stirring frequently to prevent burning.

Add the mushrooms, stirring frequently until they start to loose their water and begin to colour.

Add the red wine and cook over a medium heat for about 20 minutes, storing occasionally until the red wine has reduced, leaving a thick, rich onion sauce.
