Ingredients
500gm French (or “in season” runner) Beans – trimmed
2 tbsp Virgin Olive Oil
1 Green Chilli ( finely chopped)
2 cloves of Garlic (crushed)
100gm Parma Ham – cut into strips
100ml White Wine
2 Sprigs of fresh Thyme
100ml Tomato Passata
Preparation Method
Cook the beans in boiling water until tender and then drain.
Heat the oil in a large frying pan and fry the garlic, chilli and ham together for about 5mins, and until the ham is crisp.
Add the wine and reduce for a couple of minutes, scraping any brown bits from the base of the pan – these will add flavour to the sauce.
Add the thyme, tomato passata and then finally the beans, and stir well.
Cook for a further 10minutes to let the flavour combine.
