French Fried Onion Straws

Ingredients

1 medium Sweet Onion – very thinly sliced
250ml Buttermilk
150gm Flour
1 teaspoon Garlic powder
1/2 teaspoon Salt
1/2 teaspoon Black Pepper 
2 teaspoons Cayenne Pepper
1 teaspoon Paprika
Oil for frying

Instructions

Using a mandolin slicer, cut the onion into rings rings . Separate and break each ring to form a straw.

Combine onions and buttermilk in a wide based bowl and allow to sit for 1 hour; stirring occasionally.

Mix the flour, garlic powder, salt, black pepper, cayenne and paprika in a shallow bowl.

Fill a large, heavy bottom pan with 2 inches of vegetable oil. Heat to 375 degrees.

Working in batches, use your fingers to remove onions from buttermilk, tapping to remove any excess liquid. Drop into flour mixture, separate as best possible and turn to coat before carefully placing in hot oil.

Ensure that the oil is up to temperature and fry for 3-4 minutes, or until lightly brown. 

Remove to a paper towel lined baking sheet or plate to drain.
