Baked Brie with Salted Caramel and Balsamic

Serves 6


Ingredients

For the Caramel Sauce

50gm Butter
50gm Sugar
1tblspn Golden Syrup
40 ml Double Cream
1/2 tspn Sea Salt

For the Baked Brie

1 whole Brie (enough for 6)
50ml Balsamic Vinegar
Freshly ground Black Pepper


Preparation Method

Preheat the oven – Gas mark 4.

Put all the ingredients for the caramel sauce into a heavy bottomed saucepan and stir continuously over a medium heat for about 8 minutes, or until golden brown (it will thicken as it cools).

Meanwhile heat the Balsamic Vinegar until it has reduced by three-quarters (75%)

Slice the Brie into 3-5cm wedges and space them out on a greased oven tray.

Bake for about 3 minutes (or until they BEGIN to melt)

Use a fish slice to plate and then drizzle them firstly with the salted caramel sauce, then the reduced Balsamic Vinegar and finally with Black Pepper.

Serve immediately – delicious!
