Italian Roast Potatoes

Serves 3


Ingredients

500gm Baby Potatoes (or cut to the size of plums)
2 tbspn Olive Oil
3 Cloves of Garlic (crushed)
1 tspn Italian Seasoning (see Reciepe below)
1/4 tspn Paprika
1/4 tspn Salt
1 tspn chopped Parsley
100gms Parmesan Cheese
Butter (cut into small cubes)

Italian Seasoning

Mix all the ingredients together (will keep for about 6 months)

1 1/2 tspn dried Oregano
1 1/2 tspn dried Parsley
1 1/2 tspn dried Basil
1 tspn Garlic Powder
1/2 tspn dried Rosemary
1/2 tspn dried Marjoram
1/2 tspn dried Thyme
1/4 Black Pepper


Preparation Method

Preheat the oven to 200C (Gas 6)

Peel and size the potatoes (just clean and rinse if new) and then cut in half

Heat up an oven- safe skillet, add the Olive oil and on top of the hob, cook (and turn) the potatoes until the surface turns crispy.

Push the potatoes to one side of the pan and saute the garlic. Add the italian seasoning, salt and paprika – stir and combine well.

Turn off the heat and sprinkle the cheese and parsley on top of the potatoes

Transfer to the oven and roast for 15minutes.

Remove from the oven, add the butter cubes and serve immediately
