Sriracha Cheese Crackers

Serves 6-8 (70ish Crackers)


Ingredients

150gm plain (pastry) Flour
1/4 tspn Sea Salt
75gms cold Butter (cut into pieces)
125gms grated strong Cheddar Cheese (blue cheese/stilton also works well)
2 tspn Sriracha
50ml Cold Water
Coarse Salt and Olive Oil for Topping


Preparation Method

Add the Flour, Salt and Butter into a food processor. Pulse until the butter is mixed in with no large bits remaining. Add the cheese and pulse to combine.

Add the Sriracha and Water and pulse until the mixture forms a ball. Remove the ball, wrap in greaseproof paper and chill in the refrigerator for 1 hour.

Preheat the oven to 180C (Gas4)

Lightly flour a cutting board and roll (half) the dough into an even 1/8inch thickness (keep the other half covered in paper for the second batch). Use a pizza cutter to cut into squares.

Before separating, brush the top with Olive Oil and sprinkle with coarse Sea Salt.

Transfer the crackers to a lined tray, leaving a space between each (they don’t spread, but they shouldn’t touch).

Bake for 10-15minutes, rotating halfway through for even cooking to a golden brown.

Cool on a wired rack and store in an airtight container.
